Covert Farms Sparkling Pinot Noir 2019
Season Profile: The 2019 season started with above average spring temperatures and was looking great through a smokeless summer. Unusual for the Okanagan, September brought frequent rains which were a challenge to some vineyards, while our regenerative practices provided for a healthy crop. We green thinned heavily anticipating a cooler fall forecast, which allowed for properly ripened fruit prior to the hard frost on Oct 15th.
Varietals: Pinot Noir 100%
Harvest: Sep 4, 17.6 brix, hand harvested at 2.2 tons per acre
Vinification: Naturally fermented in a stainless steel tank and then gravity fed directly into bottles where fermentation finished without intervention
Vineyard: Mimi's block, planted 2009, glaciofluvial silty loam, elevation 420m, drip irrigation
Certification: Certified Organic, Salmon Safe, Vegan
