This bold yet delicate sparkling brut comes from our 1/2 acre single plot of Epicure, a Swiss hybrid variety that was planted in 2012 in soils comprised of old river stones and sandy loam. The grapes were hand harvested and gently pressed. Using the Traditional Method style, the wine was left to age on the lees for 18 months prior to disgorging with no dosage. This dry wine is bright and long, with notes of melon, pineapple, hay, and a subtle toasty mineral finish. (pH 3.1, TA 9.9, and residual sugar, 11.8).
